Sambal Matah.  It’s certainly in my top 5 reasons to visit Bali.  It’s simple.  Bawang merah (shallots, or red onion, directly translated), bawang putih (garlic, or white onion, if you Google it), kapur (lime), cabai (chilis), serai (lemongrass) and minyak (oil).  Matah indicates ‘raw’, so this is ‘raw sauce’.  considering it’s made from fresh chopped veggies this makes sense.  Yumm!
